These definitely taste like pineapple upside-down cake, they are very easy to make, few ingredients, 12 minutes.
What I did as an add on to this recipe: I used a large spoon and flipped these over in their juices after 12 minutes of cooking; instead of closing the foil - I put them under the broiler for 3 minutes; While everyone ate all of their dessert - we talked of what to do with the extra cakes and pineapple - We are going to do this again but add an extra pineapple ring to the bottom - where the recipe says put pineapple ring on brown sugar/butter mixture and then top with cake - we will add another ring to the cake to finish it off - also doing the pineapples by themselves with this technique would make them very delicious on ice cream. This is very sweet so the mini cakes were the right amount for each person - I'm thinking instead of brown sugar next time, I'll try the pineapple juice instead -just for curiosities sake.
